Now that the mornings have been a bit chilly, I have to switch to something a more warming then my trusty smoothie… While my mom was visiting me she made oatmeal every morning and inspired me! Oatmeal is so warm and comforting and really starts the morning right. Here is how I do it!


serves 2

3 cups of water
1 cup of oats (I use gluten-free oats from Bob’s Red Mill)
dash of cinnamon
pinch of sea salt
handful of organic raisins (dried cherries or cranberries work just as well)
3 dates pitted and chopped into little bit sized bits

Optional Toppings:
hemp or almond milk
walnuts
almonds
fresh bananas or berries
maple syrup if you need a little more sweetness
mulberries

Bring 3 cups of water, cinnamon, raisins, and sea salt to a light boil. Add the oats and lower heat to a rapid simmer. Stir occasionally for about 7-10 mins or until water starts to absorb and oats are looking thick and soft. Add chopped dates and cook 5 more mins or until all water is absorbed, continuing to stir occasionally. Serve immediately into a bowl. Then you can top with countless items. I like mine with walnuts, bananas, and hemp milk. This morning I added mulberries which are rich in nutrients and delicious!!
